Opals are beautifully bright yellow with a distinctively crunchy texture and a sweet, tangy flavor.

I first found this one at Whole Foods on a Tuesday. I saw it recommended on social media, but seeing this yellow in person was still a bit of a surprise. It turned out to be one of my favorites."
